At Global Gourmet Catering, we believe that innovation is the key to success and we certainly bring that thinking to everything we do. Once again, our chefs have recently been focused on creating delicious, drought conscious menu items that we wanted to share with our clients and event partners, along with some other surprises and a sneak peek of other things to come. (Shhhhhh.) We shared some of our chefs’ fine results at a fun-filled two day VIP event at The Masonic where we introduced some of our new cocktails, hors d’oeuvres, appetizers, buffet stations, entrées, and desserts.
As guests arrived they were greeted with trays of seared and crispy Steak Frites as well as Tokyo Crisps with Fermented Tokyo Turnips and Miso Sesame Butter on Housemade Nori Crisps. (Not a bad way to start.)
Next, stations of chef composed ‘bites’ such as Clam “Chowder” beckoned guests with our twist on the popular dish served in clam shells with an edible “Oyster” Cracker spoon.
Guests were invited to be seated in the transformed auditorium where they were entertained with Culinary Theater, giving everyone a front row view to lunch being prepared by our expert chefs in exhibition. They served up beautifully plated and vibrantly green Spring Pea and Field Green Salads composed of Country Line Baby Head Lettuce, English Peas, Sugar Snap Peas, Snow Peas, Pea Tendrils, Pecornio Tartufo and drizzled with Nepitella Vinaigrette. This was paired with a refreshing Botanical Bliss cocktail that mixes the flavors of Fresh Muddled Cucumber and Mint, Lemon and Lime Juice, Simple Syrup, Sparkling Water and St. George Gin.
The main entrée was a Pan-Seared Alaskan Halibut with Chicken and Dungeness Crab Dumplings. Our Beverage staff skillfully paired this dish with a delicious Chateau Montelena Dry Riesling that contained just the right amount of sweetness to bring out the flavors of the fish. This was followed by a Roasted White Chocolate Mousse with Banana Cake and Lemon-Rum Sauce that our Director of Beverage Garo Eldemir boldly chose to pair with the smoothness of North Coast Brewing Company’s PranQster Belgian Style Golden Ale which worked in perfect harmony with the creamy flavors of the dessert.
