For the 11th year in a row, Global Gourmet Catering provided food service for VIP Corporate Cabanas and VIP festival-goers for the Outside Lands Music and Arts Festival in Golden Gate Park – the city’s largest music festival – for all three days.. We were also honored to once again cater Bacon Lands, and the new Feast in the Trees with Chef Hugh Acheson. We enjoyed the warm weather, served 10,000 meals to hungry VIPs, and listened to some great music by headliners Janet Jackson, Florence + The Machine, and The Weekend.
This year’s Outside Lands VIP Menu featured a variety of cuisine, like Argentinian ‘Choripan’ Chorizo Hoagies and NOLA Seafood Boils. The sausage was draped in Chimichurri sauce and the seafood boil topped with Creole Aioli – perfect for those with a love for spice. For those interested in a lighter dish, the Fresh Greek Fregola Salad with Cucumbers, Kalamata Olives and Feta Cheese, and the Chilled Shrimp Ceviche with Blue Corn Chips were the way to go. These dishes paired well with the 70 degree sunny weather on Friday and Saturday, which made the festival all the more enjoyable.
The Fried Chicken Sandwich was the Daily Special and a crowd favorite. On Friday, the chicken was fried in Thai Curry-Coconut Sauce and completed with Green Papaya Slaw and Cashews. On Saturday, Bacon Jam was smeared over a delectably toasted Acme Pain de Mie Bread Roll, and topped with Peach Coleslaw and Blue Cheese Vinaigrette. To finish off the weekend, Whole Grain Mustard Fennel Slaw, Pickled Red Onion, and Truffle Oil comprised Sunday’s Chicken Sandwich and made us never want to say goodbye.
And last, but certainly not least, the Yuca Fries drizzled with Aji Amarillo Sauce, Queso Seco, and Encurtido were extremely popular. Yucca is a root vegetable grown in regions of South America and nutritionally similar to a potato, and were just as good (if not better) than regular fries. We also served Short Rib Pastrami Tacos and Portobello Pastrami Tacos, topped with Sauerkraut and Pickled Mustard Seeds in a Warm Tortilla. And when it was time for a sweet snack we offered Chocolate Sea Salt Cookies, Fruity Pebble Rice Krispie Treats, and Double Chocolate Brownies.
We were delighted to also be serving at Bacon Lands again this year and also Feast in the Trees, which was new this year. Guests were joined by Chef Hugh Acheson, Chef/Owner of four restaurants in Georgia, and founder of Seed Life Skills – teaching the next generation to be sustainable stewards of food and financial resources.
Chef Acheson grew up in Ottawa, Canada and started cooking at a young age. At 15, he began working in restaurants and gaining experience from Chef Rob McDonald at Henri Burger, Chef Mike Fennelly at Mecca, and later with Chef Gary Danko at his restaurant. Feast in the Trees was exclusive to Chase Sapphire Preferred and Reserve card members, who earned a four-course meal on Friday, a three-course luncheon on Saturday, and a wine tasting on Sunday. Our four-course dinner included a Hamachi and Uni Tostada, Wild King Salmon, Snake River Farms New York Strip, and a Cuban Flan. Guests were seated under Golden Gate Park’s beautiful Monterey Pine Trees while enjoying restaurant-quality cuisine and some amazing live music.
Those festival attendees visiting (and re-visiting) Bacon Lands had their choice of a Grilled Cheddar Cheese and Smoked Sonoma Bacon Sandwich, Classic BLT with Smoked Nueske’s Bacon, any bacon slice of their choosing, or a whole bag of mixed bacon if they so desired.
Nothing pairs better together than great food and live music and entertainment. This year’s lineup included many famous comedians and over a hundred acts from all different musical genres, from Lizzo, BORNS, Portugal. The Man, Mac Demarco, to Janelle Monae, N.E.R.D, Father John Misty, and Beck. We can’t wait to see what next year’s lineup brings!
