It was just another exciting day here at Global Gourmet when we recently hosted a cooking class for 24 event planners for Yahoo. They arrived on a beautiful and warm evening ready to pull up their sleeves and put on their aprons.
They were welcomed to our tasting room with a lovely wine and cheese selection from Wine Meats Cheese. Once our guests were fully relaxed, we put them to work. Everyone was divided up into four teams sorted by color. Once the teams were created, the planners were whisked down to our kitchen where our cooks were waiting to be paired with them.
The Red Team worked with our chef Howie to create a Salad of Grilled Sweet Corn, Bacon Lardons and Arugula with Pickled Red Onions and Smoked Paprika Lime Vinaigrette.
Chef Dontaye headed up the Blue Team who did an amazing job preparing Grilled Heirloom Summer Squash, Blistered Padrón Peppers, Charred Red Onions and Housemade Pickled Eggplant. They were also charged with making a Warm Pole Bean Salad with Caramelized Trumpet Mushrooms, Marble Potato Confit and Mustard Seed Vinaigrette.
The Black Team was paired up with chefs Spain and Michelle who whipped up Roasted Red Pepper Panisse and Sautéed Swiss Chard with Harissa Emulsion as well as Marinated Grilled New York Strip Steaks, Vegan Harissa “Yogurt” and Chimichurri Sauce.
Our pastry chef James was in charge of the Green Team who made the dessert for the evening. They baked Brown Butter Financiers with Clover Honey Roasted Peaches, Hazelnut-Chocolate Streusel and Bourbon Chantilly Cream.
Once all of the dishes were complete they were taken back to our tasting room where they were displayed in all of their glory. Our guests then sat down to enjoy the fruits of their labor with a lovely dinner party catered by themselves.
